In 1973, a group of sake brewers broke away from bigger breweries to establish Ichinokura, to make a sake that wasn’t recognized by the government (and therefore not taxed).
Smooth and crisp, Mukansa was one of the first dry sakes brewed. Great with pork skewers or mackerel simmered in miso. Get notes of cookies and cream, banana bread, and pancakes.
Ichinokura was established by four breweries, each of which had a 70 to 300 year history. Also known as Ace Brewery, Ichinokura was named to express their wish to become the number one micro brewery.
