This is some of Niigata's finest ultra-premium daiginjo, brewed and bottled with minimal intervention - unfiltered, unpasteurized, and undiluted - in other words, this is the straight dope. Crystal-clear notes of mineral, lemon-lime, juicy-drippy black plum, and honeysuckle. This genshu has extra body from the higher ABV, thick texture, and a hint of effervescence reminiscent of ramune soda. Enjoy this with your favorite citrus salad, ahi poke, or beef tataki with ponzu if you're feeling frisky.
