This year's hiyaoroshi (fall sakes that are aged over the summer) from Shichi Hon Yari gives us a spicy punch with high acid and a slight by satisfying bitterness of toast. We especially enjoy the rich texture of this sake that satisfies with ample umami and refreshing acidity. We've been enjoying this sake after decanting for at least a few minutes in a carafe or resealed in a half full bottle for a few days. Enjoy at room temperature or warmed.
