A rare opportunity to try a nama origarami (unpasteurized sake incorporating sediment). Orizake has a unique texture that is often fizzy and a little savory thanks to the sediment. This sake in particular has a lactic flavor, with hints of coconut and tart yogurt. The rice used to brew this sake, Sake Mirai, was cultivated in the hope of a bright future. It is a precious sake rice that took the Takagi Sake Brewery of Yamagata Prefecture's "Jyushiyo" 18 years of breeding and crossbreeding. The label was illustrated by Hanna Kirshner, the author of Water, Wood, and Wild Things.
