Inspired by how people stored their food throughout history in Niigata, Hakkaisan Brewery piled tons of snow into a warehouse and created a yukimuro (snow refrigerator) that does not require any electricity and maintains a steady temperature of 35°F all year long.*

Hakkaisan originally sought to age this sake for five years, but discovered that it would withstand a full eight years of aging due to the stable environment of the yukimuro. With this low-and-slow method, this sake is released having complex layers of flavor while still being very light and clean. Enjoy notes of melon and caramel. Eight years of aging seemed to be kismet as the ha in Hakkaisan means eight.

This eight year snow-aged junmai daiginjo has been long-awaited by fans of their original yukimuro junmai daiginjo that's aged for three years.
