For months, Yoshi Sako of Den Brewery, has been formulating Den Blanc, an exciting new sake. Using white koji instead of yellow koji, Sako calls Den Blanc, "a new expression of sake, with zesty acidity, gentle sweetness of rice and a refreshing finish."
This event is a special opportunity where Yoshi and Lani Sako will talk about the characteristics of white vs. yellow koji, the differences between Den Blanc and Batch 11 (Nama or Pasteurized) and take us through a tasting of both sakes.
The Sakos have also provided a recipe for Trout + Citrus Salad, a perfect pairing for Den Blanc. Make the salad and join the party!
