To celebrate the release of Den Brewery's newest sake, Den Blanc, we called upon Lani Sako of the Den Duo, for some pairing tips. While tasting the new brew, she mentioned that she whipped together this Trout + Citrus salad that played off the tart and refreshing Den Blanc, which is made with white koji, instead of the usual yellow koji, used for the original Den sakes.
On Sept 9th, we'll be having a Zoom tasting to celebrate the release of Den Blanc, and for this occasion, Lani provided us with the recipe for this quick, easy salad. We tested the recipe to see how it paired with Den Blanc ahead of the event and our verdict was: it's a go! Try for yourself – it's a bright pairing that that makes your lips pucker!
3 oz arugula
4 oz smoked trout*, broken up into bite size pieces
Half of a grapefruit, sectioned, outer skin and pith removed, then cut in smaller pieces
Half of a large avocado, cut into bite size pieces
1 cup cooked farro
10 slices of thinly sliced red onion or shallots
Lemon vinaigrette (1.5 tbsp fresh lemon juice, 1.5 tbsp olive oil, 1/2 tsp salt, and pepper)
1. Combine dressing ingredients and whisk together.
2. Place arugula, smoked trout, cooled farro, grapefruit, and avocado in a bowl and gently coat ingredients with dressing. Mix with hands.
3. Taste and add more salt or pepper if needed.
4. Enjoy with a chilled glass of Den Blanc!
*Lani prefers texture of trout, but says you can substitute it with smoked salmon.
