The Dream Continues: Jiro Gastronomy and Jiro Philosophy
Jiro Ono became a household name when he was featured in the 2011 documentary Jiro Dreams of Sushi. At the time of the movie, Jiro was 85-years-old, running Sukiyabashi Jiro in Tokyo, a sushi restaurant he opened in 1965. Now 91-years-old, Ono is considered one of the world's greatest sushi chefs alive.
We now carry two books that pay homage to the talented nonagenarian: Jiro Gastronomy and Jiro Philosophy. Both are pocket-sized books that are written in both Japanese and English and feature vivid photographs of Jiro's craft. As its name suggests, Jiro Gastronomy focuses on the sushi that appears on Jiro's omakase menu – made up of 60 types of fish! The book also features the dos-and-don'ts of eating sushi. Jiro Philosophy goes one step further and looks at Jiro's thought process and the execution of his masterful edible art.
