Kayoko and I met Kevin Diedrich back in 2011 when we threw the Gift of Food benefit at the Burritt Room for the victims of the 2011 Tohoku Earthquake and Tsunami disaster. Since being at the helm of the Burritt Room bar, we've visited him at Jasper's and BDK. And last year, he opened his very own bar Pacific Cocktail Haven (P.C.H.). We've always been a fan of Kevin's inventive cocktails that are bright and never too sweet (he often uses sake in his cocktails!) .
We've been spotlighting highballs all month at Umami Mart. We highlighted the Umeshu Highball last week, and now, Japanese Whisky Highballs are on our minds. When we thought of the idea of making a Japanese Whisky Highball video, it was a no-brainer that we would go to P.C.H., where they feature a Highball Happy Hour every Monday-Thursday from 5-7pm and Fridays-Saturday from 4-7pm.
Kevin was kind enough to invite us to P.C.H. last Tuesday and show us how to make a refreshing Japanese Whisky Highball.
